Tom Yum is a famous Thai soup which is popular not only in Thailand, but also in some Thai restaurants all over the world. It’s name is derived from two Thai words: "tom" and "yam". "Tom" refers to the boiling process, while "yam" refers to a Thai spicy and sour salad. The soup has distinct hot and sour flavours, with fragrant spices and herbs generously used in the broth.
Tom Yum Goong is the version of the soup that is most popular among tourists, and is made with prawns as the main ingredient. There are lots of recipes on the internet, but many of them are made complicated. Making a Tom Yum Goong is very easy and can be put together in about 20-25 minutes. Here’s how.
Ingredients:
· 2-3 cups of water (1/2 of a sauce pan)
· 10 shrimp (can be substitute by chicken)
· 2 tomatoes
· 4-6 limes (depending on you how sour you want)
· 8 Thai chillies (use an alternative Chilli pepper if you don’t have Thai chillies)
· Handful mushrooms
· 1 sliced handful (or about 2 stalks) of lemongrass
· 8 leaves of kaffir lime leaves (optional)
· 1 inch by 1 inch chunk of galangal root
· 1-2 teaspoons of a few squirts of fish sauce
· 1 teaspoon of sugar
· ½ small onion
Procedure:
Step 1. Slice up onion, tomatoes, chillies, mushrooms, lemongrass, galangal and shrimp.
Step 2. Bring water to boil over the high heat medium-sized saucepan.
Step 3. Add the sliced galangal, lemongrass and kaffir lime leaves in the boiling water. Boil them for about 5 minutes.
Step 4. Add the shrimp, and then boil it for about 5 minutes.
Step 5. Add the sliced Thai chillies and mushrooms, and then boil them for about 2 minutes.
Step 6. Add the chopped tomatoes and onion, and then boil them for about 5 minutes
Step 7. Add 1 teaspoon of squirts of fish sauce (you can add more if needed).
Step 8. If the soup is slightly bitter, add 1 teaspoon of sugar and boil the soup for another 5 minutes.
Step 9. Take the pot out of the stove, and then add lime juice and squeeze. (If the stove is still on, that make the lime juice bitter so take off the saucepan before adding the limejuice.)
