The Dream of fusion 7 came many years ago when Lindsey was slaving away in the kitchens of Bathers Pavillon (Balmoral) , Merronys (Circular Quay) and the Providores (London) and the working holiday that lasted 8 years! Little did Lindsey know that with each city and restaurant he worked he would be gathering tastes and flavour combinations that would one day appear on his own menu!

His dream...to create a restaurant with a relaxed atmosphere that felt like his own home and to cook for people that love to eat! 2006 Fusion 7 was born , finally a place of his own to create food that he loved.

In 2007 he met his partner Frea and he taught her with jedi skills all that he knows! Two years ago they created a new little taste tester (Henry!) and together this little family runs the locals favourite restaurant!

They continue to travel taking their annual holiday ( where the restaurant shuts down) and with it comes an ever changing menu and fresh ideas.

Using as much local produce as possible and always supporting local business Fusion 7 continues their legacy of creating great food in a relaxed environment! Open 5 nights a week ( family and surfing on their days off!) they work with passion and together with the “fusion family” they love every second!
