When Karl Fazer brought this recipe from St. Petersburg in the late 19th century, he could not have known it would become one of Finland's most known sweets. First sold in Helsinki in 1929, these green spears are still made today in Fazer's own factory in Lappeenranta. Same care. Same tradition. The royal crown on the box says it all.
This is marmalade, not a gummy. The set comes from pectin, listed as gelling agent E440. Sugar and glucose syrup build the body. Water keeps the center soft. Acidity regulators E330 and E337 keep the sweetness from turning flat. Flavorings carry the fruit. E141 gives the green coat.
