Craft bourbon is booming. If you visited one bourbon or whiskey maker in the US every day it would take more then two years to cover the entire country. And what a great couple of years it would be!
Mike Paladini and Danny Polise are lifelong best mates with a shared love of sipping good bourbon. In 2018 they took their passion up a notch and Penelope Bourbon was born.
As a fairly new producer they are not bound by any preconceived expectations of how their whiskey should be made or what it should taste like. So they make whiskey that tastes great to them and that they are proud to share with their friends.
As big fans of both Weller and Pappy (who isn’t?), they favour a four grain mash bill with a similarly high wheat content. For this release they’ve finished their wheat heavy bourbon in a second cask that has had a light/medium char and heavy toast similar to the finishing cask used for Woodford Reserve Double Oak.
This toasted barrel finish bourbon is a welcome delight. Almost a dessert whiskey, craft bourbon done right.
The wheated mash bill on this Penelope has a delightful mouthfeel, softer and sweeter than your classic corn, malt, rye bourbons. The best way to describe this drop is warm liquid butter.
On the nose deep caramel and cinnamon spices, classic dark fruits, a welcome aroma, taking a back seat on this one. One sip and your palate is coated in thick dark cocoa, like a cherry ripe, that dark chocolate taking control of the dark fruits. Oak tannins follow and round out into classic caramel and vanilla. On the finish there is a little hint of honey and butterscotch over a serving of stewed pears.
A wheated bourbon with a toasted barrel finish we are delighted to share this whiskey with you all.
